Black Bean Tortilla-tastic!

Over the holidays we decompress by spending quality time together and reconnecting with our relatives. My children and I spend hours in the kitchen, creating Christmas treats, holiday favourites and trying out new recipes. 

This holiday season my friends at Dempster’s released their limited edition Black Bean & Salsa Tortillas. We traditionally have a taco dinner once a week, however this week we wanted to change things up a bit for the holidays. 

We started with the usual suspects of tortillas, 

added some colourful veggies, 


and loads of shredded cheese. 

I added some ground chicken that was heavily spiced with a variety of taco seasonings, mild taco sauce and some extra hot pickled green beans (for DH & I) to give our new recipe a little kick. 

I covered the black bean tortilla with shredded marble cheese and baked at 400 degrees on a cookie sheet, uncovered for 25 minutes. I served our spicy black bean tortillas with sour cream and salsa. 

The only suggestion my DH had was to cut or shred the spicy green beans instead of leaving them whole. Everyone agreed that the baked black bean & salsa tortilla added a little extra zest to our dinner.
