Week Two is finally here and this week I am sharing my second favorite recipe, a spicy summer chicken salad recipe. This is an excellent ‘make-ahead‘ salad for the cottage. I love the spicy heat this salad brings to my our dinner plates as a main or as a side. I will warn my guests before dinner that my salad has a kick to it. I also serve it with sour cream and nacho chips, on the side, to help temper the heat.
I will often pick up the items for this recipe at my local Independent grocery store.
4 Maple Leaf Prime chicken breasts (boneless, skinless)
1 cup Franks Hot Buffalo Wing hot sauce
8 cups romaine lettuce, chopped
4 beefsteak tomatoes, diced
2 cucumber, diced
1 large red onion, diced
Blue Cheese, optional garnish
Ranch dressing* ( I make my own Ranch dressing the recipe is at the bottom of this post)
Place the chicken and the hot sauce in a saucepan and heat over medium heat until the chicken reaches an internal temperature of 165F, approximately 12 minutes.Remove from heat and shred the chicken using two forks.
Toss all salad ingredients together and serve while the chicken is still warm.*
Homemade Ranch Dressing
2/3 cup Gaylea Gold Premium Sour Cream
2/3 cup Hellman’s Real Mayonnaise
2/3 cup buttermilk
3/4 tablespoon buttermilk ranch salad dressing mix
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1 teaspoon freshly chopped cilantro
1/2 teaspoon salt
1/4 teaspoon pepper
1/4 teaspoon paprika
I will make this dressing at least a day ahead of time to ensure that all the flavours mix evenly. I don’t like parsley in my Ranch dressing, however, the cilantro gives it a fresher taste.
*To make this recipe the most cottage friendly as possible, I prepare the chicken breasts and ranch dressing at home. I put all the ingredients into separate containers for transport to the cottage. Just before dinner, I will heat up the chicken and place all the ingredients into a large bowl. I place the ranch in a serving dish (in an ice bath) on the dining table to that my guests can add as much or as dressing little as they like.
