We did it! Beckett and I made the Chocolate-Avocado Muffins, actually he did most of the work while I took pictures and prepped the ingredients.
We found the recipe easy to follow and appreciated how the site explained how to properly prepare the avocado. At this stage all the wet ingredients are combined and the mixture looks gross, but I just had to share this imperfect picture.
Beckie was the master chef tonight, he wanted to mix, stir, crack eggs and of course taste test!
Here is the finished product! We were able to make 12 regular sized muffins and 12 mini-muffins from the recipe. The kids have packed the mini-muffins for their lunches tomorrow. That is a good sign we will be making these muffins again.

What we love about this recipe:
